- Rondo has been through a whole-bunch maceration for 9 days.
- Solaris pressed directly.
- Fermented separately and rested on its lees for 10 months before blended together. Aged in a stainless steel tank.
Nothing is added in the winemaking process and only the naturally occurring yeasts are used.
Bottled in July -24 with a microdose of sulphur, (10mg/l) to ensure a safe transition between tank and consumer.
Grapes from 15 year old vines planted in Södra Mellby, Österlen.
Vines have never seen any chemical treatment or fertilizers. Our work in the vines is to encourage biodiversity and the holistic balance of the vineyard by increasing organic matter and promoting microbial activity. Fertilizers are always naturally sourced from local highland cattle cows, brown algae, compost teas etc.
